Almond Butter And Undercooked Eggs.. I Blame You, St. Lucia.

So I have completed Day One of my Meal Prep Plan. Yeah, I started on a Tuesday… So what? It seemed too cliché to start on a Monday. I have to say, I don’t feel like chewing the leg off of a baby chicken so I must have done something right.

I get married in less than 6 weeks. OMG I am dieting to look fabulous in my Wedding Dress/Honeymoon Bikini… How cliché of me! Whatever. It felt like the right thing to do. I have been making better choices in my eating habits for a while now, I go to the gym a few times a week, and I don’t binge eat in my closet like I used to; so I have been on a somewhat ok path for several months. However, I haven’t been super strict with myself and there are days I devour a 25 Count of Dunkin Donuts Munchkins. Because America. That’s why.

Alas, my Munchkin days are behind me. I really have to get serious if I want to walk around St. Lucia nude. So I went to the store last night, bought a bunch of super healthy and delicious food and prepped my meals for the rest of the week. Sadly, I ate everything before taking a picture to share with you so you will just have to take my word for it that my meals today were as colorful as a Skittle Exploding Rainbow (minus the Skittles).

Here is a list of what I had because you truly care about my eating habits. It wasn’t all a Win:

Breakfast:

Quaker Old Fashioned Rolled Oats with a touch of Organic Agave- Ok, so I bought the original rolled oats. I should have bought the three minute ones. I attempted making my rolled oats in the microwave and letting it sit for 10-12 minutes to allow proper cooking time. What I ended up with was a bowl full of slimy, undercooked oats that tasted like regurgitated pizza dough on the way down. But I ate that shit anyway. I got this! #BossStatus

A handful of cut strawberries, grapes, and blueberries. Super delicious. Can’t go wrong with fresh fruit.

Snack:

Activia Strawberry Yogurt- Yeah, yeah. Greek is the way to go. I do love the occasional Greek… But my digestive system could use a little help from the probiotic that Jamie Lee Curtis swears by. Yum!

Lunch:

Seven Baby Carrots

1 Slice of Low Sodium/Fat Free Turkey Breast nestled between two large Cucumber Slices. Pretty yummy and better than using bread.

2 Celery Sticks with Almond Butter filling the boats. So I have been wanting to get in on the Almond Butter Craze for a while now.  Everybody is talking about it and they say it’s better for you than regular peanut butter so of course I had to try it. My verdict- It’s pretty good. It is in no way better than peanut butter (I heart peanut butter), but it is tasty. I see you Almond Butter… I will have to keep you around.

1 Hard Boiled Egg. Lolololololololol. So I have never made hard boiled eggs. Whhaaaatttttt?!?! I know, I know. I cook a lot. And I cook a lot of different things. I love cooking. But Hard Boiled Eggs have always intimidated me. They are so damn delicious!! But it is just something I always left to my mom to cook. It was so much easier that way! I decided it was time to shit or get off the pot and I just went for it. Last night I was all sorts of confident when my eggs were done. I gave myself a silent kudos and packed them away for lunch…

So yeah… They weren’t completely cooked all the way through. I knew it the moment I started tapping that bitch on my desk. Instead of a beautiful light crack, I was left with a cracked, soft dent. Uughhhhhhh. It took me 25 minutes to peel that Motherfucker. When I finally made it to the center, the yoke broke in half and a little bit of goo dripped out. What did I do, you ask? Well, I threw the yoke away. Because gross. But I ate the semi-soft white shell. That part wasn’t too bad and I feel like I owe it to those four eggs to eat them. It’s not their fault I am a failure. So I will bring those eggs to work for the next three days. And I will take the 25 minutes to peel off the shell. #NotAQuitter

Snack:

1 Granny Smith Apple. Delish.

2 Small Squares of Aged Sharp Cheddar Cheese. I fucking love cheese.

Dinner:

Tonight it will be Grilled Chicken and Pineapples with a side of Chipotle BBQ for dipping. But just a little!

And Corn.

So there you have it. My first day ever of actually following through with Meal Prep. I survived. I don’t want to kick any small children and I am ready to take on Day Two.
